Vegeterian Tips: Reduce your refined sugar intake. I ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as maple syrup, stevia and agave whenever possible such as in coffee and tea and indulging in the refined stuff only occasionally.
Ingredients (use vegan versions):
- 1 1/2 cups vegan sugar
- 1 cup canned pumpki
- 1/2 cup applesauce
- 1/2 cup water
- 2 vegan egg replacers
- 1 2/3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamo
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
Directions:
Mix dry ingredients, mix wet ingredients, and
stir them together. Bake in a greased loaf pan at
350 degrees for 65-70 minutes. Let cool for at
least 10 minutes, then remove from loaf pan to a
plate.
Serves: 6-10
