I ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as maple syrup, stevia and agave whenever possible such as in coffee and tea and indulging in the refined stuff only occasionally.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> vegan bread
<li> Peanut Butter
<li> Fruit Preserve
<li> Brown vegan mustard
<li> Chocolate Sauce
<li> Toothpicks</ul>
<p>Directions:
<p>Take one slice of vegan bread and cut the crust off. Flatten the piece of bread and spread any combination of ingredients on one side (I espcially like peanut butter and brown mustard). Roll the piece of bread with the filling inside to make a jelly roll. Slice the jelly roll into four pieces lengthwise and spear with a toothpick to prevent it from unrolling. (You might want to spear it before cutting it into pieces) This makes a wonderful or&#8221;derve for parties.
<p>Serves: as many as you like
<p>Preparation time: 1 minute per roll-up

<p>Toast the vegan bread and rub the clove of garlic over it.  Saute <br />the mushrooms in the oil until tender, and add spinach. Add <br />lemon juice and cook till spincach is tender. Remove from <br />heat.  Put mixture onto vegan bread and eat.  This is really good <br />food.  <br />

<p>Ingredients (use vegan versions):</p>
<ul>
<li>1 Green and 1 Red (nonhot) Pepper
<li>1-2 large onions
<li>1 Medium package mushrooms
<li>Oil for frying, or water to steam-stir
<li>Jar of hot pepper relish (usually found in Mexican or Jewish sections at the grocery store)
<li>Small sub rolls
<li>1-3 cloves garlic
<li>Soy cheese-provelone style (optional)</ul>
<p>Directions:
<p>Clean, peel, seed all veggies. Place in pan and either fry <br />with a little oil or add small amount of water and <br />steam-stir until they are soft. Add a small amount of hot <br />peppr relish at the end of cooking, or to taste. (If you <br />can&#8221;t find hot pepper relish then whole canned (or fresh) <br />hot peppers chopped can be used-although I find that the <br />relish gives the best end product).
<p>Cut sub rolls open and toast, then rub with cut garlic.
<p>To serve, place veggies on cut sub roll and top with  <br />soy cheese. Place in broiler until cheese melts.
<p>This is an excellent way to reap the benefits of hot <br />peppers-great for people with circulation and heart <br />problems, and oh so good!<br />

Water is especially important when adjusting to a new way of eating, as it will help curb any cravings you may experience.</p>
<p>Ingredients (use vegan versions):</p>

<li>portabello mushrooms
<li>sandwich vegan bread
<li>olive oil
<li>balsamic vinegar
<li>optional: rosemary, thyme, garlic, alfalfa sprouts, vegan mustard</ul>
<p>Directions:
<p>1. Mix 2 parts olive oil with 1 part balsamic vinegar in a <br />small bowl.<br />2. Optional: Add rosemary, thyme, and/or garlic to taste.<br />3. Marinade the portabello mushrooms for just a few seconds <br />in the mix.<br />4. Put the mushrooms in a pan and fry them as fried as you&#8221;d <br />like them to be.<br />5. Make sandwiches!  It&#8221;s great on toasted wheat vegan bread with <br />alfalfa sprouts and dijon mustard.  Everything in this <br />recipe is done to taste, so that&#8221;s why it&#8221;s all so <br />idefinite. <p><b>Vegeterian Tips: </b>When Vegetarian Being a vegetarian is not always easy, especially when dining out at restaurants with your carnivorous friends. Since you can t always eat at vegetarian or vegan restaurants, here are some tips to read, meant to make your dining out experiences that much better.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li>zucchini
<li>yellow squash
<li>mushrooms
<li>onions
<li>vegan BBQ sauce (sweet/tangy)
<li>pita vegan bread</ul>
<p>Directions:
<p>You can use as many or as little of the vegetbles as you <br />prefer.  Lightly spray a frypan (I use a wok-type pan with <br />a steamer lid) with vegetable spray. Heat over medium-low<br />heat. Meanwhile cut the veggies into strips.  Add to pan.<br />Season lightly with salt, pepper, red pepper flakes (and<br />any other seasonings you prefer, i.e. basil, oregano, etc.)<br />Saute until crisp/tender.  Drain juice (juice can be <br />reserved for later cooking use with other recipes).  Add<br />BBQ sauce &#8211; heat thoroughly.  Cut Pita in half and spoon <br />veggies into pita.
<p>If you want to avoid the vegetable spray, you could saute<br />the vegetables in a few tablespoons of vegetable broth.<br />

<p>Ingredients (use vegan versions):</p>
<ul>
<li>1 cup dry lentils
<li>1 onion, 2 cloves garlic, 1/2 teasp. chili power, 1 teasp. liquid smoke
<li>1 tablespoon tamari, 1/2 pkg. tofu, 1/2 cup wholewheat flour</ul>
<p>Directions:
<p>Wash and cover lentils 1/2&#8243; with water.  Add chopped onion, <br />garlic, chili powder.  Cook till tender and add Tamari <br />and liquid smoke.  While lentils are cooking, in a blender, <br />chop 1/2 pkg. tofu and add 1/2 cup wholewheat flour. When <br />lentils are tender, mix with tofu/flour mixture.  This <br />should be real thick and easy to spoon onto a hot griddle in <br />the shape of a burger.  You may want to add 1 T. of <br />Olive oil on the griddle.  Cook on each side. <br />
