<p><b>Vegeterian Tips: </b>Pizza and pasta are a great way to go for vegetarians, but just be careful of all those carbs and eat them in moderation. If you don t eat dairy, ask for a slice of pizza with sauce topped with tons of veggies and see how great it tastes, and how good it is for you.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> 1 cup soy (unsweetened) or rice milk
<li> 1 frozen banana (peeled and cut into chunks before frozen)
<li> 6 dates (Medjool variety are best)
<li> 1 tablespoon of vegan maple syrup or other sweetene
<li> dash of nutmeg and cinnamon (optional)</ul>
<p>Directions:
<p>Place soy milk in blender and at low speed, add dates, one at a time<br />until the dates are completely pulverized.  Add frozen banana chunks,<br />one at a time until you achieve the consistency you like.  Add maple<br />syrup and spices.  Serve immediately!
<p>I like to pour this into a bowl, freeze it slightly, and eat it with<br />a spoon.  Yum!!!!
<p>Serves: 1 &#8211; 2
<p>Preparation time: 5 mins.

<p><b>Vegeterian Tips: </b>Read the sandwich descriptions on your menu. Most would be quite tasty and still filling without the meat. Just make sure to tell your server that you want to hold the chicken or roast beef, and to double up on the veggies and cheese.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> 1 papaya, about 2 1/2 cups cubed
<li> juice of 1 lime, about 1/4 cup
<li>  vegan sugar syrup (1/2 cup each sugar and water)</ul>
<p>Directions:
<p>Combine the vegan sugar and water in a heavy saucepan.<br />Bring to a boil over high heat and cook uncovered for 5 to 6 minutes, or until liquid has reduced to about 1/2 cup.<br />Set aside to cool.<br />While you&#8221;re making the vegan sugar syrup, peel and seed the papaya.<br />Place the chunks of fruit in the work bowl of a food processor.<br />Juice the lime and toss the juice in with the papaya.<br />Process until you have a completely smooth puree.
<p>Stir in the vegan sugar syrup and pour the whole works into a 9-inch square metal dish.<br />Freeze until firm, about 1 to 1 1/2 hours.<br />When the fruit puree is frozen, remove it from the freezer.<br />You should be able to lift it effortlessly out of the pan.
<p>Break it into small chunks and put the chunks back into the food processor.<br />Whizz it around for a while.<br />The longer you whizz it, the more the texture of the sorbet will resemble ice cream.<br />It can get really good!<br />Devour immediately or scoop into an airtight dish (Tupperware works well) and freeze. You can store it for up to 1 month with no loss of flavor.
<p>I have about a bazillion recipes for sorbet, all using different fruits. The proportions remain the same; vary the lime juice according to what fruit you are using. Sometimes you may not need any at all!<br />Try layering different flavors of sorbet in a champagne glass, rainbow style, and garnishing with fresh fruit, edible flowers, or a sprig of mint. I served this to my ice-cream-loving friends and they were wowed!
<p>Serves: 4
<p>Preparation time: 1 1/2 hours

<p>Directions:
<p>Pour the juice into an empty ice cube tray.  Put in the freezer fo<br />about 3 hrs with popsicle sticks in the juice so when they freeze you have <br />something to hold on to.  Good for children&#8221;s partys!

<p>Preparation time: 3 hrs.

<p><p>Peel bananas, slice or break into 1&#8243; rounds, and freeze 8 hours or overnight.
<p>Place in blender with a little water and blend at high speed until smooth.  Add raspberries or blueberries, etc., and blend.
<p>Additions:
<p>You can use a tablespoon or two of undiluted, frozen fruit juice (this will make it a little sweeter).
<p>Serves: 2-4
<p>Preparation time: 5-10 minutes (blending time)

<p>Ingredients (use vegan versions):</p>
<ul>
<li> 7 peaches
<li> 6 oz. can frozen orange juice concentrate
<li> 12 oz. can frozen peach juice concentrate</ul>
<p>Directions:
<p>Remove pits from peaches.  Puree peaches in food processor.  Stir in orange juice and peach concentrates.  Add 12 oz. of water.  Freeze in ice cream maker.
<p>I came up with this after looking for a peach sorbet recipe on the internet &#038; finding none.  I wanted to show my mother what a sorbet was, make a peach dessert for my stepdad, and find out how to use their ice cream maker.  I am pleased to say I met all three of these goals, and named my creation in their honor.
<p>Serves: about 15 1 cup servings (slightly less than a gallon)
<p>Preparation time: 2 hours

Bring a water bottle with you wherever you go and invest in a simple filter for your home. Water is especially important when adjusting to a new way of eating, as it will help curb any cravings you may experience.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> 3/4 cup brown rice syrup
<li> 2 cups whole wheat flour
<li> 2/3 cup chopped walnuts
<li> 1/2 cup carob powder
<li> 2/3 cup water
<li> 1/3 cup oil
<li> 1-1/2 teaspoon Roma, Postum or Cafix (coffee substitutes)
<li> 1 teaspoon salt
<li> 1 teaspoon vanilla</ul>
<p>Directions:
<p>Combine all ingredients except flour.  Stir until <br />smooth, add flour and mix well.  Pour into 8&#215;8 inch <br />oiled pan and bake 30 minutes at 350 degrees.  Remove<br />from pan to cool.  Frost as desired.
<p>Serves: 8-10
<p>Preparation time: 30 mi<br />

Cucumber rolls are available on many menus, and if there is a sushi bar available, you can ask to try different types of vegetarian rolls, such as cucumber, cream cheese, and avocado, or perhaps vegetarian tempura rolls.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> 3/4 cup sweetener	
<li> 1 cup rasins	
<li> 1tsp nutmeg
<li> 2 cups flour(whole wheat pastry, white unbleached, all purpose, whatever you have&#8230;)
<li> 1 1/2 cups water
<li> pinch of salt
<li> 1 cup grated carrot
<li> 1 teaspoon cinnamo
<li> 3 tablespoon non-hydrogenated vegan margarine
<li> 2 teaspoon baking soda
<li> 3/4 cup chopped walnuts</ul>
<p>Directions:
<p>Preheat oven to 325. grease 13&#215;9 pa<br />mix everything BUT flour, salt, nuts and baking soda<br />in a medium saucepan.<br />bring to a boil, then let simmer for 5 minutes<br />pour into a bowl and let cool to room temperature.
<p>when cool, mix in flour, baking soda, salt and nuts<br />and put it in the pan.
<p>bake for 40 minutes or untill a toothpick comes<br />out clean.
<p>let it cool, and then frost with some of that<br />yummy pre-made cream cheese flavored frosting<br />or make your own&#8230;

<p><b>Vegeterian Tips: </b>When Vegetarian Being a vegetarian is not always easy, especially when dining out at restaurants with your carnivorous friends. Since you can t always eat at vegetarian or vegan restaurants, here are some tips to read, meant to make your dining out experiences that much better.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li> 1 cup non-hydrogenated vegan margarine
<li> 3/4 cup vegan brown sugar
<li> 3/4 cup  vegan sugar
<li> Ener-G Egg Replacer = 2 &#8220;eggs&#8221;
<li> 1 teaspoon vanilla
<li> 2 1/4 cups flour
<li> 1 teaspoon baking soda 
<li> 1/2 teaspoon salt
<li> 1/8 teaspoon baking powder
<li> 1 cup choc. chips
<li> 1/4 or 1/2 cup (to taste) oatmeal (dry)
<li> 1/4 to 1/2 cup ( to taste) coconut(shredded)
<li> 1/4 to 1/2 cup( to taste) chopped walnuts</ul>
<p>Directions:
<p><p>Pre heat oven to 375 degrees. Cream together first 5 ingredients. Mix together the flour, salt, <br />baking soda and baking powder, then add to the creamed mixture. Then stir in the choc. chips, <br />oatmeal, coconut, and walnuts. Drop by tabelspoon onto an ungreased cookie sheet and bake at <br />375 degrees for 9 minutes then turn sheet and bake for another 4 minutes. Cool well before <br />removing from cookie sheet.
<p>Serves: 2 doze
<p>Preparation time: 20 mi<br />

<p><b>Vegeterian Tips: </b>Eat a dark green vegetable broccoli, spinach, kale, collard greens at least three times a week. These nutritional powerhouses are packed full of vitamins such as calcium and iron. On the run or hate spinach? Try drinking your greens. I recommend Naked Juice s Green Machine its made with fruit juice as well as greens, so it tastes better than others.</p>
<p>Ingredients (use vegan versions):</p>
<ul>
<li>2 cups spelt or whole wheat flou
<li>2 teaspoon baking powde
<li>1/2 teaspoon sea salt
<li>1 teaspoon cinnamon
<li>1/2 teaspoon nutmeg
<li>1/2 teaspoon cloves
<li>1/2 cup vegan maple syrup
<li>1/2 cup unrefined corn oil
<li>1 cup diced apples, unpeeled (if organic)
<li>1/3 cup (approx.) apple juice</ul>
<p>Directions:
<p>Place dry ingredients in a bowl and mix well.  Mix wet<br />ingredients together and add to dry.  Place in an 8&#8243;<br />round, slightly greased, spring form pan.
<p>Topping:<br />1/2 cup chopped walnuts (or nut of your choice)<br />1/2 tsp cinnamon<br />2 Tbsp rice syrup or maple syrup<br />1 tsp unrefined corn oil
<p>Mix together and spread evenly over cake.  (You may have to<br />wet fingers to spread mixture evenly.)
<p>Bake at 350F for 40-45 minutes.  Cool and serve.
<p>(This recipe works equally well with pears.  Just add 1 tsp<br />ginger to cake and 1/2 tsp ginger to topping.)
<p>Instead of above topping, spread with favourite jam or <br />apple butter and put nuts in cake.
<p>Calories: 236/slice<br />Fat: 13 grams
<p>Rather fatty, just eat with a low fat meal.
