Vegeterian Tips: Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you re vegan or mostly vegan.
Ingredients (use vegan versions):
- 3 medium potatoes, 1/4 inch cubes, with ski
- 1 large onion, small dice
- 2 medium tomatoes, small dice
- 2 tablespoon lemon juice
- cayenne to taste
- salt and pepper to taste
- olive oil
Directions:
Heat Olive oil in heavy skillet or sauce
pan.
Dice potatoes and start to saute over
medium-high heat. Don”t stir much. Just
turn over once or twice to brown all sides
While potatoes cook, cut up onion.
Add onion to potatoes and stir once or
twice.
While that cooks, dice up tomatoes.
Add tomatoes to the pan. Stir a bit.
Add lemon juice, cayenne, salt and pepper.
Stir. Cover and cook a bit until
potatoes done to your taste. Adjust
seasoning.
(good add-ins: cumin, garlic,
veggie sausage)
Eat by scooping with bits of pita bread.
