Vegeterian Tips: If you know you are going to be eating at a certain restaurant on Saturday night, call ahead and ask if they offer any vegetarian entrees. If the answer is no, ask if something can be prepared for your dietary needs. Most likely, the answer will be yes.
Ingredients (use vegan versions):
- 1 cup small bow tie pasta
- 1 bag mixed frozen vegetables
- 1 teaspoon minced garlic
- 1 diced small onio
- 1- 14oz can diced Italian tomatoes
- 1 tblsp. olive oil
- season to taste
Directions:
Bring a four quart pot to a boil and add the frozen
veggies, when almost done add the bow ties and cook till
tender. Dice and mince the onions and saute in a pan in
about 1 tbls. of olive oil. When tender add the diced
tomatoes and cook down until most of the moisture is gone
from the tomatoes. Drain pasta and veggies and mix all
together. Serve with a crusty vegan bread and light salad.
