Vegeterian Tips: If you are going to a gathering with all your meat lover friends such as a barbeque or pig roast, bring your own veggie burger to place on the grill. You can also make your own veggie kabobs with fresh vegetables and tofu. Just make sure to bring enough, as most people will want to try and probably like what you are eating!

Ingredients (use vegan versions):

  • 1 lb bag of frozen, sliced okra
  • 2 (14 oz) cans whole peeled tomatoes
  • 1 (14 oz) can whole kernal cor
  • 1 (14 oz) can cream-style cor
  • 1 tablespoon salad oil
  • salt, pepper, and garlic to taste

Directions:

Heat oil in skillet, add the okra and spices. Saute until okra
is soft (about 7-10 minutes). Add tomatoes (crush them with your hand
first) and the tomato juice. Simmer on med-high heat for 10 minutes.
Add the corn, and simmer another 10 minutes. Serve. This recipe is
great alone, or serve over a bed of brown rice. Contains very little fat.
