Vegeterian Tips: There are many different options at Mexican restaurants, including burritos, tostadas, enchiladas, tacos, nachos, and veggie fajitas. Most food options can be prepared vegetarian by substituting beans for beef without a problem.
Ingredients (use vegan versions):
- 1 14-1/2 Can Contadina Diced Tomatos
- 1 6 oz Can Contadina Tomato Paste
- 1 8 oz Can Contadina Tomato Sauce
- 1 14-1/2 Can Water
- 2 lbs Fresh Okra Chopped or 3-10oz Packs of Froze
- 2 Cups Onion Chopped
- 1 Toe Garlic Minced
- 1/8 tea Black Pepper
- 1/2 tea Ground Tyme
- 1/8 tea Salt
Directions:
If you love Okra, like I love, Okra Oh, Oh, Oh what a dish!
Use a 3 quart pan for comfort.
Add all ingredients.
Bring to a boil, cover.
Simmer for 1 hr.
Serves: 8
